Millet and Vegetable Stir-Fry Bowl

Ingredients

1 cup of mixed millets (such as foxtail millet, barnyard millet, or pearl millet)

2 cups of water

1 tablespoon olive oil or coconut oil

1 small onion, chopped

2 cloves of garlic, minced

1 cup of mixed vegetables (broccoli, bell peppers, carrots, zucchini, etc.), chopped

1 teaspoon ginger, grated

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt to taste

Freshly ground black pepper to taste

Fresh cilantro leaves for garnish

Instructions:

Cook the Millets:

Rinse the millets under cold water and drain.

In a saucepan, bring 2 cups of water to a boil.

Add the rinsed millets, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the millets are cooked and water is absorbed. Fluff the millets with a fork and set aside.

Prepare the Stir-Fry:

Heat the oil in a large skillet or wok over medium heat.

Add cumin seeds and let them sizzle for a few seconds.

Add chopped onions and sauté until they turn translucent.

Stir in minced garlic and grated ginger and sauté for another minute.

Add Vegetables:

Add the mixed vegetables to the skillet and stir-fry for about 5-7 minutes until they are slightly tender but still crisp.

Seasoning

Sprinkle turmeric powder, cayenne pepper, salt, and black pepper over the vegetables. Mix well to coat the vegetables evenly with the spices.

Combine Millets and Vegetables:

Add the cooked millets to the skillet and gently mix everything together, ensuring the millets and vegetables are well combined.

Final Touch:

Taste and adjust the seasoning if needed.

Garnish with fresh cilantro leaves.
